Well, y'all, I feel dumb. All this time I've been doing extractions the hard way, using the polygonal lasso tool in Photoshop, just because I was scared of the pen tool. Then I got this book and it has a great section on mastering selections. Now extractions take half the time they used to! I heart the pen tool.
